The order rack in two lines

This is the 45cm order rack: an aluminium rail that fixes to any surface with adhesive or screws and holds the dockets in a row, always in the same place.

Who it is for

For anyone working from paper dockets with more than two in the queue. A sheet left on the bar top gets wet, moves and ends up under another one: hung on a rail it stays where it is.

Where to mount it, which is half the product

Above the station, at the eye level of whoever is making the drinks and not of the guest. Dockets have to be read without looking down, or the gain in order is lost: if reading them means bending, the bartender pulls them off and lays them out in front, which is exactly the mess the order rack was meant to remove.

The order they arrived in is the only thing that counts

When six dockets come in together, knowing which one came first is worth more than any other information. On a rail the sheets stay in the sequence they were hung in, and they come off from one end: the queue reads left to right without thinking about it. On a bar top the order is lost at the second docket somebody moves to put a glass down.

Adhesive or screws

Adhesive suits smooth, clean, non porous surfaces, and it has the advantage of drilling nothing: it is the choice for a rented site or for a station that might move. Screws are the permanent answer and they hold even when somebody pulls a sheet off hard, which happens more often than you would think during service.

Forty five centimetres, meaning how many dockets

It depends on how wide the sheets are, but on a standard docket six or seven sit side by side comfortably. It is the right size for a single station; on a long bar with two people making drinks it pays to fit a second rail rather than one longer one, so each has their own queue and nobody reads the other’s.

Aluminium, and why not steel

Because a docket rail carries no load: it holds sheets of paper. Aluminium weighs 350 grams against nearly twice that in steel, so the adhesive really does hold and the screw fixing needs no special plugs. It is one of the few cases in a bar where the light material is the right technical choice and not the cheap compromise.

The dockets that stay up

A sheet comes off only when the drink has gone out, never before. That is the rule that makes the order rack a system rather than a hook: looking at the rail tells you at any moment how much work is left, and anyone coming over to help can see it without asking. Pulling the docket while you are still making the drink is the fastest way to lose count.

What happens at the end of the shift

The rail is empty, and that is the final check: if a sheet is still on the order rack, there is a drink nobody made or a tab nobody closed. On a bar covered in loose paper that check does not exist, and some of those slips only come to light the next day from the till.

Care

A wipe with a cloth when it needs it. The point to watch is the adhesive, if that is the fixing you chose: the steam and heat rising off a station weaken it over time, and a rail that comes away always does it with six dockets on board. A check now and then, pulling gently downwards, avoids the surprise.
