The vacuum wine saver in two lines
The BarUp wine saver is a 14cm hand pump with two rubber stoppers: push the stopper into the neck of the open bottle, place the pump on top and draw the air out with four or five strokes. The wine is left without oxygen and keeps up to 7 days in the fridge. It works on 75cl and 1 litre bottles, with still and semi-sparkling wine.
Who it is for
For the venue that sells wine by the glass and ends the night with three or four half-open bottles. Without a vacuum, an open white is finished after two days and a red after three: that is litres down the sink, and it shows in the week’s GP. With the wine saver the same bottle is opened again the next night and the night after, and the first glass still has the nose it had when the cork came out.
It works at home for the same reason: a good bottle opened on Saturday can be finished on Wednesday without tasting of vinegar.

Seven days instead of two: how the wine saver works
Wine spoils because of the oxygen in the bottle above the liquid. The emptier the bottle, the more air there is and the faster the wine oxidises. The pump removes that air and the stopper keeps it out: without oxygen, oxidation slows, and the maker declares up to 7 days with the bottle in the fridge. The cold does its part: at room temperature the days are fewer.
The stopper has a release button: press it, air goes in and the stopper comes out without forcing. So you can open the bottle for a glass, close it and pump again, every night, until the wine is finished.

Two stoppers are enough, and when you need more
One pump and two stoppers keep two bottles under vacuum at once. A venue with six or eight wines open by the glass keeps a single pump and buys the extra stoppers in pairs: the pump is the same, the stoppers stay in the bottles. The sum is simple: one stopper for every bottle still open at the end of the night.
Choose the wine saver if
If you sell wine by the glass and pour half bottles away every week. If the problem is the bubbles in sparkling wine, a vacuum does not keep them: for Prosecco and Champagne you need the pressure stopper that clips under the collar, which does the opposite job and keeps the gas in.
Care
Rinse the pump and stoppers in warm water and leave them to dry. Keep them out of the dishwasher: heat makes the TPE in the stopper lose its elasticity, and a stopper that has lost its seal is a wine saver that does nothing.
