The wine bucket in two lines
The Dionisio is a 5 litre Lumian wine bucket, designed to keep one bottle of wine or champagne cold. It is 18/10 stainless steel, 22cm tall, 21cm across the top and 14cm across the base, and weighs 930g. It has a flared rim and two side handles. There are four finishes: silver, or plated gold, copper or black. Lumian calls it Suaglass.
Who it is for
For restaurants, hotel bars, wine bars and cocktail bars selling wine and sparkling wine by the bottle at the table. Lumian lists it for hotels and cocktail bars. A bottle served at the table has to stay at the right temperature from the first glass to the last, and the wine bucket does that in front of the guest: if it is plastic or dented, an eighty-euro bottle arrives in a two-euro container. The bucket stays on the table for the whole meal, and a steel bucket with handles keeps up the standard of the room.
The four finishes serve a practical purpose: matching the bucket to the rest of the service. Silver goes with everything; gold and copper follow bars that already have mugs, coupes and back bar in those colours; black suits a dark fit-out.
At home it is the bucket for dinner with friends and sparkling wine at celebrations, instead of a bottle put in the fridge at the last minute that warms up halfway through the evening.

How to use the wine bucket
Fill the wine bucket with ice and cold water, not ice alone: water touches the whole surface of the bottle and chills it faster, while cubes on their own leave gaps. Five litres are enough for a 750ml bottle submerged to the neck with ice around it. The 21cm flared rim lets the bottle come out and go back without knocking the edge.
The two handles are for when the bucket is full: water, ice and bottle are heavy, and they go from the bar to the table carried with two hands. On the table, stand the bucket on a plate or a folded napkin to catch the condensation. The 14cm base keeps it steady.

How many wine buckets you need
Count tables, not bottles on the list: on a full night every table that orders a bottle keeps its wine bucket for the whole meal. A ten-table room selling sparkling wine at the table on Saturdays keeps at least four or five, plus one spare at the bar for the bottle open for wine by the glass.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.

Care
At the end of service, empty it, wash in hot water with a mild detergent and dry straight away inside and out with a cloth, so the polished steel stays free of limescale marks. On the gold, copper and black plated finishes, use a soft sponge and no abrasive powders. The manufacturer does not declare it dishwasher safe: we recommend hand washing, and for the plated finishes it is the rule.
