The collins ice mould in two lines

This is an ice mould in food-grade silicone: it makes long spears that fill narrow glasses from bottom to top, one or two per glass.

Who it is for

For bars that serve in tall, narrow glasses. The ice spear solves a specific problem: a large cube will not go into a collins or a highball, and small cubes melt too fast.

Not only about looks

A spear has less exposed surface than the many small cubes that fill the same volume, so the drink dilutes more slowly even in a tall glass, where dilution is usually the main problem. There is a second effect that matters: by filling the glass from bottom to top, the ice chills the whole column of liquid instead of only the base. With cubes settled at the bottom, the top of a long drink stays warmer, and that is exactly where the guest drinks from.

How to put it in the glass

Before the liquid, with the glass tilted, sliding the spear down the wall: dropped straight in, a long heavy piece hits the base hard, and on a thin glass that is a real risk. If the drink takes two spears, set them side by side and not crossed, because crossed spears leave an air pocket in the middle and the liquid passes without touching the ice.

Which drinks it suits best

Long drinks built in the glass: gin and tonic, mule, spritz, whisky highball. All are drinks sipped slowly, where carbonation and aroma fade as the meltwater rises. That is exactly where this ice mould helps, with a side benefit for the bubbles: less ice surface means fewer points where CO2 escapes, so the drink stays sparkling for longer.

The gin and tonic is the textbook case

Tall glass or balloon, plenty of liquid, low strength and lots of carbonation: it is the drink where every flaw in the ice shows. With small cubes the tonic loses its bubbles quickly and the drink is watery by halfway; with one or two spears from this mould the column stays cold to the end and the CO2 leaves more slowly. It is also why bars that build their list around gin and tonic invest in ice first.

Keep the silicone level

On a long mould this matters even more than on others: if the shelf slopes, water collects at one end and the spears come out with one side thinner, which then breaks on release. A flat, clear shelf solves it, and the spear comes out whole.

Care

Dishwasher safe, food-grade silicone. Wash and dry between batches, because leftover water makes the new ice stick. Keep it away from strongly scented food in the freezer: ice picks up odours, and in a gin and tonic that shows more than in any other drink.
