Who it is for

A lever, not a spoon
The twist is not decoration. It lets the stem turn between thumb and index finger while the bowl rests against the wall of the glass: the spoon moves, not the arm, and the ice turns as one block without knocking about. Choose the length on the glass
It is the only criterion that really counts, and hardly anyone explains it: the spoon has to reach the bottom of your tallest vessel without your hand going into the liquid. 30cm is enough for a low mixing glass and serving glasses; 45cm is for 28oz tins, tall mixing glasses and long drinks built in the glass. If in doubt, take the long one: a spoon that is too long still works, one that is too short does not.
The flat teardrop, and what it is really for
It is the end you use for layering: rest the back of the teardrop against the inside of the glass and let the liquid run down over it, so it settles on the layer below instead of mixing in. That is how layered drinks and floats of cream or red wine are made. It also crushes a sugar cube or a piece of fruit when nothing else is to hand.
How long to stir
Twenty or thirty turns, and the guide is not the clock but the frost on the outside of the vessel: when the metal or glass clouds over with condensation, the drink is ready. Stirring longer does not make it colder, it dilutes it, and dilution is an ingredient of the recipe like any other.
Why bare steel lasts longer
A stainless steel Hoffman has nothing on it that can wear: no plating to dull, no colour to fade. That is why the basic model outlives the decorated ones even at a third of the price, and why a busy station keeps bare steel for service and the finished pieces for the bar on show. The 18/10 alloy takes the acidity of citrus without trouble, and citrus is the harshest thing a spoon touches.
Care
Dishwasher safe, no precautions needed. Dry it to keep limescale marks off the polished stem, and check now and then the join between bowl and stem, which is where a cheap spoon gives way if it is used to prise things open.
