The rule that matters more than the tool
The scoop never stays in the ice. Buried in the well, it cannot be found without putting hands in, and that is how a clean well stops being clean. Keep it in a separate container, dry, or in the holder on the edge: it is a hygiene rule before it is a tidiness one, and in an inspection it is one of the first things checked.
Eco wood or polycarbonate
Eco wood looks better on a bar in view and does not reflect, so it does not bounce the spotlight into the eyes of a guest at the bar. Coloured polycarbonate takes knocks and hot wash cycles better, and in a bright colour it is quicker to find. They work the same way: the choice is between looks and toughness, and it depends on where the well is.
Why 10oz is enough
Because it fills a tumbler in one go. With a small scoop you need two or three scoops per glass, so the move multiplies by the number of drinks in the evening; with one that is too big you take more ice than needed and the rest goes back into the well after being handled. 10oz fills a glass in one scoop with nothing left over.
