The 24cm ice scoop in two lines

It is an ice scoop in 18/10 stainless steel with a mirror finish. It measures 24cm long, 8cm wide and 5cm deep, and weighs 140g.

Who the 24cm ice scoop is for

For bartenders filling glasses and shakers all evening who want to do it in one movement. A small scoop takes two or three goes to fill a highball, and every extra go is time, and ice that ends up on the bar top. The 24cm scoop has the capacity to get it done first time.

A closed scoop also carries the meltwater, a perforated one leaves it in the well: the difference between a diluted drink and one that is not.
Capacity, the real reason to choose a scoop

8cm wide and 5cm deep make a bowl that picks up the ice for a tall glass in one pass. It is the difference between one movement and three, and over two hundred drinks in an evening it adds up to real time saved.

The 24cm length works with the bowl: the handle keeps the hand away from the ice even when the well is half empty and you have to reach the bottom. That is a hygiene point before a comfort one, because ice is food and hands do not go in the well.

18/10 steel and the mirror finish

18/10 steel is the alloy of professional cutlery: eighteen parts chromium to ten of nickel, for resistance to rust and to acids and for its shine. On a tool that sits in a damp place all day, it is the choice that gives no trouble over the years.

The mirror finish has a practical advantage beyond looks: on a polished surface, dirt shows at once. On a tool handling ice that goes into the glass, one that tells you when it needs cleaning is more useful than one that hides it.

The rule almost nobody keeps: the scoop does not live in the ice

It is the most common mistake behind a bar, and the first thing a hygiene inspection notices. A scoop left in the well has its handle buried in the ice, and that handle is touched by every hand that passes. Ice is food and is never cooked: whatever lands on it goes into the glass as it is.

The scoop’s place is outside, in a dedicated holder next to the well, or hanging up. At 140g the scoop helps here, because it is heavy enough to stay where it is put rather than sliding off at the first knock.

Why steel and not plastic

Polycarbonate scoops cost less and have two drawbacks you pay for later. The first is the edge: with use it wears and chips, and a chip of plastic in the ice cannot be seen. The second is colour: polycarbonate yellows with hot wash cycles, and then looks dirty even when clean.

Steel has neither problem. It costs more to buy and is not replaced every season, and on something used two hundred times a day the sums come right quickly.

Care

Dishwasher safe with no special care: it is bare steel, with no plating to cloud. The only attention is for the mirror finish, which shows limescale marks after a cycle: a wipe with a dry cloth as it comes out of the rack keeps it bright. No product is needed.

The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item.

FAQ

Is it dishwasher safe? Yes, with no special care. Dry it to keep the mirror finish free of marks.

Can it be left in the ice well? No, and it is not a detail: a handle buried in the ice is the most common hygiene fault behind a bar.

Steel or polycarbonate? Steel does not chip or yellow. Polycarbonate costs less and is replaced more often.
