The red 200ml squeeze bottle in two lines

This is the compact size of the range, with the same narrow tip as the large one: about an eighth of an ounce per squeeze.

Who it is for

For bars with a lot of syrups and none that run out quickly. The reason to choose the small size is not the price, it is how fresh the product inside stays.

An open syrup has a short life

And that life starts when you decant it, not when you open the bottle. In a large container a slow product stays open for weeks: it takes in air with every squeeze, picks up microorganisms from the room and at some point turns. A small size empties sooner, so you refill more often, but the product is always recent. That is the whole case for the 200ml squeeze bottle.

One squeeze is about an eighth of an ounce: two make a quarter, four make half an ounce.

The squeeze stays the same

The tip pours like the one on the large size, so counting squeezes works the same way: two for a quarter ounce, four for half. What changes is how often you refill, and on a slow product that is an advantage rather than a chore. Bars running six or eight different syrups keep most of them in the small size and save the large one for one or two products.

Colour in a row of bottles

Red is one of the easiest colours to read at a distance and in low light, and on most bars it ends up on the dark sweet products: grenadine, red berry syrups, sugar. What matters is not which colour you pick but that the choice holds for every shift. A colour code each bartender reads their own way is worse than none, because it gives a confidence that is not there.

How to tell a syrup has turned

By the smell before the taste, and by a film on the surface. A syrup that starts to ferment forms small bubbles that stay, and the smell goes sour; at that point it is thrown away, not rescued. The 200ml size cuts the amount you throw away when it happens, which is the second reason it suits a slow product.

Decanting, done properly

A washed, dry bottle, a clean funnel, and the product poured without the source bottle touching the neck. Never top up over an old base: what sits underneath is older than what you add, and with constant topping up a bottle is never truly fresh. Empty it, wash it, fill it.

Care

Wash it fully at every change of product, and on a fixed schedule even without a change, paying attention to the tip. Dry it before filling, so no water dilutes the syrup in the part touching the air, which is the first to go.

How many to keep on the line

As many as the products you dose by the squeeze, plus one clean spare. A washed, empty bottle lets you change product without stopping to wash, and that is what usually breaks the rotation: when the only alternative to a dirty bottle is the sink, the dirty bottle wins.

Label it, even with the colour

The colour tells you the family, the label tells you the product and the date. The colour serves the hand during service; the date serves whoever opens up and has to decide what goes in the bin. Masking tape and a marker are enough, as long as the date is the day it was decanted.
