The black built-in bar workstation in two lines
The black built-in bar workstation is a well in an ABS and polycarbonate blend, 84.5cm wide, 54 deep and 35 tall, complete with a trapped waste outlet and five fruit trays with airtight lids. It weighs 8kg and sets into the counter top.
Who it is for
For anyone with a bar counter and no station. A flat top, however long, forces you to keep ice, garnishes and tools sitting on it, that is in the space you work in. Setting a well into the top moves all of that below the line of the counter and gives the surface back to the work: it is the step that turns any counter into a cocktail station, and it costs a fraction of a new bar.
The trap is the part that decides whether the work is clean
The trapped waste outlet does more than drain the water: the bend full of water acts as a plug and blocks odours coming back up from the waste line, which on a counter where spirits and citrus juice go down all night is the difference between a station you can use and one you can smell. It is also why the black built-in bar workstation should be connected by someone who knows where the waste runs, rather than set over a bucket under the top.

The 35cm of height want checking before you buy
That is the dimension that disappears under the top, and under the top there is almost always something already: a drawer, a shelf, the undercounter fridge. Thirty five centimetres of well plus the room the trap and the waste bend need are the real clearance to check with a tape before ordering, along with the width of the opening between the uprights. It is the most common mistake made when buying a drop-in well, and it comes to light with the cabinet already apart.
Choose the black built-in bar workstation if
Your counter top is dark, or in dark timber, where black disappears and the well stops reading as an object on show. If the counter is steel or in light tones, the grey version of the same well sits better: they are identical in everything else.
Five trays with airtight lids
The lid is the part that changes the end of service. With an airtight seal the cut fruit is still usable the next day instead of going in the bin, and in the meantime it takes on no odours from the ice or the citrus next to it. Five compartments cover the standard fit out of a bar: two citrus, a seasonal fruit, the olives and the cherries, or four garnishes and one compartment for straws.
Where it goes along the counter
Not in the middle for symmetry, but at the point where the drink is built. The working rule behind the bar is to keep the ice on the side of the hand that does not pour, so the gesture is a reach and not a crossing: pour with the right hand and the well goes to your left, and the other way round. Getting the side wrong costs half a step on every glass, which over two hundred drinks becomes a harder night without anyone working out why.
