The double jet pourer in two lines

The double jet pourer is the stainless steel pourer from the fast flow range: the maker calls it the Jet Pourer, Double Flow. Stainless steel body, natural rubber cork with reinforced ribs, a spout wider than the one on the classic pourer. It comes in packs of twelve.

Who it is for

For anyone pouring a lot of liquid per drink rather than a few centilitres. Long drinks, spritz, juices, syrups and soft: these are the pours where a narrow spout becomes the bottleneck of the service, because the hand waits for the bottle to empty. On a single glass that is two seconds, over two hundred covers it is minutes you do not get back. The double jet pourer exists for those pours.

What double jet means

That there are two ways through: the wide channel the liquid leaves by, and the small tube that lets air in while it does. A pourer with no air intake sends the stream out in surges, because the bottle goes into depression and the liquid stops until a bubble gets in. With air entering through a channel of its own the stream stays steady from the first centilitre to the last, and a steady stream is the only one you can count.

The count is redone, not inherited

This is the mistake that costs most when changing pourer. Count four beats with the classic model, fit the double jet pourer to the same bottles and you pour more on the same count, because the section of the spout is different. The measure slips by a few millilitres per drink and nobody notices: it shows at the end of the month on bottle usage, not on the night. Redo the count once with water and a jigger and the problem goes.

Why twelve and not one

Because one pourer on its own is no use. The speed rail gets armed with the same model throughout, otherwise the count changes from bottle to bottle and repeatability is lost exactly where it was wanted. Twelve double jet pourers cover the front rail of a normal bar with a few spares left over, and spares matter, because the pourer is the piece lost and crushed more than any other.

The ribs on the cork

The cork is not a smooth plug: it has ribs that compress against the glass and adapt to necks of different diameters. They do two things. They hold the double jet pourer still when the bottle is grabbed at speed, instead of letting it turn in the hand. And they seal, so liquid does not run down the glass after the pour, which is the failing that makes a speed rail sticky and forces you to wash it.

Fitting and removing

Straight in, with the palm, without twisting. Twisting rolls the rubber on itself and takes away its contact surface, and it is the quickest way to ruin a new pourer. To take it out, pull straight while holding the cork, never levering on the spout: the steel neck bends, and a bent spout pours crooked for good.

Care

At the end of service the double jet pourers come off, go into a hot water soak and get rinsed from the inside. No dishwasher on the rubber and no harsh detergents. Dried sugar residue is the real enemy: it narrows the channel, slows the stream and falsifies the count while the pourer still looks clean. Anyone working with syrups and juices soaks them every night, not once a week.

What is the difference from the classic metal pourer? The spout of the double jet pourer is wider and the flow rate higher: the bottle empties sooner, and the count of the pour is different.

Does it suit spirits? Yes, and juices and syrups too, which are where the high flow rate tells most.

Can it go in the dishwasher? No. Hot water soak and rinse, so the rubber does not dry out.

Does it fit every bottle? On standard necks yes, thanks to the ribs that compress. Magnums want the dedicated pourer, which has a wider cork.

Can it be left on the bottle overnight? On bottles in service yes. On a bottle standing for weeks a cap is better, because the air channel lets it breathe.
