The vacuum sealer in two lines
The Hendi Budget Line vacuum sealer is a bar-type machine for the counter: 38.5cm wide, 2.6kg, ABS body. Inside the lid is the compartment for a roll of embossed bags, with a sliding cutter: pull out the length you need, cut, seal one end, fill, extract the air and close. Bags up to 31cm wide, 6.5 l/min pump, 230V and 100W.
Who it is for
For the bar that vacuum packs solid and dry ingredients: cut fruit, herbs, spices, dried peels, special ice made in advance, the garnishes for Saturday’s rush prepped on Friday. The vacuum sealer is the first machine for a back bar that is starting to work on preparations, and for a home bartender making infusions and syrups it is everything needed.
It is not the machine for liquids. A bar sealer extracts air from the mouth of the bag, and with liquid inside it draws that out too: for premixes, juices and in-bag infusions you need a chamber vacuum machine. That is the first thing to know before choosing.

The roll inside the machine: what changes with this vacuum sealer
With pre-made bags you keep two or three sizes in stock and waste bag every time the item is small. With a roll you cut the exact length: a sprig of rosemary takes ten centimetres, a kilo of cut limes takes thirty. The 28cm embossed rolls and the 20cm ones fit in the compartment and the cutter slides along its guide, no scissors needed.
The panel has two seal times, for dry bags and for moist bags, and two vacuum levels: the low one is for delicate products, which a full vacuum would crush. The pump is a vibration pump, 6.5 litres a minute: it closes a bag in about ten seconds and is not built for continuous running, so work in batches with a pause between them.

Embossed bags only, and why
A bar sealer draws the air out through the mouth of the bag, and if the bag is smooth the two sides stick together and the air at the bottom stays trapped. The embossing, a raised texture on one side, leaves channels for the air all the way down. With smooth chamber bags this machine will not pull a vacuum: use embossed rolls and bags, which are also the ones that fit the roll holder.
Choose the vacuum sealer if
If you want to keep solids and dry goods and are starting out with preparations, or if you make infusions with herbs and spices at home. If you need to bag liquids, cocktail batches for delivery or in-bag infusions, this will not do it: you need the chamber machine. If you only keep a few things and do not want a roll, the same category has pre-made bags.
