Two names for the same thing: the technical grade and the old trade description, eighteen per cent chromium and ten per cent nickel. It is the standard steel of bar and kitchen equipment, resistant to corrosion from citrus acid and stable over time. The mirror finish is a surface treatment, not a plating: it does not flake or wear off, it can only scratch.
A mirror shows everything
That is the trade-off to plan for. On a mirror surface every fingerprint and every dried drop of water leaves a visible mark, so the Deco cobbler shaker needs a wipe with a cloth before it goes out on the floor. If there is no time for that wipe, a matt or satin finish is more forgiving.
