What AISI 304 means
It is the technical code for the steel sold as 18/10: 18% chromium and 10% nickel. It stands up to citrus acid, the harshest thing that passes through a shaker, and gives no taste to the drink. It is worth checking, because below that grade there are steels that go dull after a few months of sours.
This one or the weighted one
The weighted tin has a reinforced base and reaches 165g: it seals better at the first tap and stands steadier on the bar top. This one weighs and costs less. If this will be your main half tin, take the weighted one; if it is the spare or the second, this one is fine and leaves money for a decent strainer.
No plating, no restrictions
Bare steel means no special washing: dishwasher, normal detergent, no finish to dull. On a spare tin that is exactly what you want, because the spare is the one that goes into the machine with everything else without anyone thinking about it.
How a pair seals
The small tin goes into the large one at an angle, never straight: the angle makes the seal, because the steel gives very slightly along the contact line and acts as a gasket. A firm tap with the palm closes it, and the metal contracting in the cold tightens it further. To open, strike with the heel of the hand where the two rims are closest. Never pull or twist: that is how tins get bent for good.
Care
Hot water and mild soap, then dry straight away so the steel stays free of limescale marks. Protect the rim: it is what makes the seal with the large tin.
