The Lumian Hawthorne strainer in two lines

This is the Lumian strainer: a stainless steel Hawthorne with a spring and two prongs, for tins and mixing glasses, in five finishes: silver in bare steel, and black, gold, copper and bronze plated.

Who it is for

For bartenders who want the strainer to stay in place by itself. The two prongs rest on the rim of the glass or tin and hold it there, so the hand only guides it instead of pressing down.

The prongs, and when you feel the difference

This is the practical difference from a Hawthorne without prongs: there the index finger is the stop, here the tool is. On a long pour, when the tin is full and the drink runs for five or six seconds, the pressing finger tires and the grip shifts; with prongs the strainer stays where it is. You notice it even more when pouring with your weaker hand because the other is holding something else, which happens all the time in the middle of service.

The other side of the prongs

They are one more point of contact, so also one more movement to free the strainer when you move on to the next drink, and they are the part that bends if the strainer ends up at the bottom of a drawer under other tools. That is not a question of quality: it comes with having a part that sticks out. Bartenders who work very fast usually prefer a plain model; those who pour more calmly prefer this one.

On a mixing glass the fit changes

The rim of a mixing glass is thicker than a tin’s and often slightly flared, so the prongs sit further out and the strainer tends to tilt more. It is worth knowing: pour with the glass angled a little more than usual and the stream stays narrow. Moving from the tin to a stirred drink in the mixing glass, you correct the angle after two pours and stop thinking about it.

The five finishes, and how to choose

Silver is bare steel with no plating and ages best, because when the surface wears no different colour shows underneath. Black is the most striking and the least forgiving. Gold, copper and bronze are chosen to match the dominant tone of the bar, with one simple rule: one per station, because two different warm metals side by side look like a mistake.

Care

Black, gold, copper and bronze are plated: hand wash them in warm water with mild detergent and dry straight away, because the dishwasher dulls them in patches. Silver, with no plating, can go in the dishwasher. Store the strainer with nothing resting on it, to keep the prongs straight, and rinse it straight after egg white drinks, so the coils of the spring stay clean.
