That is what makes a fast service possible. The bottles stay in the same order, under the lip of the bar, and the hand reaches them while the eye is elsewhere. Change the order and the speed drops for a week, which explains why in a well run venue nobody rearranges the speed rail on their own initiative.

Three concrete differences against steel

It weighs less, it does not rust and it makes less noise when a bottle goes back in. That last point is audible in a quiet room, because the sound of glass on metal reaches the floor along with the drink. In exchange steel lasts longer and takes knocks better: for a seasonal or mobile station ABS makes sense, for a fixed bar in daily use steel pays for itself.

Six places, and what goes in them

The bases, and nothing else. Six bottles cover gin, vodka, rum, whisky and two modifiers, and any drink outside the classics means a trip to the back bar. It is an honest size for a venue with a short list or for a second station, and the choice follows the list rather than the space available.

The slots, the part used every night

They are there to unhook the rail in seconds for washing. What drips off the necks collects under the bar, and a rail that does not come off is a rail that never really gets cleaned: you run a cloth round it, reach what you can reach and the bottom stays. With quick release it goes into the sink like any other piece.

Where to mount it

Under the lip of the bar, at the height where the hand falls with the arm straight down at your side. Too low and you have to bend, too high and it comes into the working area and catches your elbows. Five hundred and seventy millimetres of real width needs a clear run: measure first, because on a broken counter a long rail does not fit and you need two short ones.

Care

Unhook it from the slots and wash it separately, every night. What drips off the necks collects in the bottom, and on a plastic that sugary residue turns tacky fast: hot water and detergent are enough, as long as the rail is off the bar and not hanging on it.

The order gets written down

On a sheet taped inside the cupboard door, with the six positions and what goes in each. It looks excessive until a new shift or an extra turns up: without the list that person rebuilds the order their own way and leaves it changed, and the next shift takes a week to readjust. On a six place rail the list runs to six lines.

What does not go in

Heavy bottles used twice a night and awkwardly shaped ones, which take the space of two. The rail is for high turnover products: everything else lives on the back bar, and the discipline on that point is what keeps six places useful rather than merely full.
