Fill the glass two thirds with crushed ice, pour in the drink, push the crown to the bottom and roll the stem between open palms, back and forth, holding the glass steady with your other hand. The ice moves, melts as much as it needs to, and the outside of the glass turns white with frost: that is the sign the drink is ready. Then top up with a dome of crushed ice and garnish.

Here the twisted stem really matters: the twist gives the palms grip, so the spoon spins instead of slipping. A smooth stem needs more pressure for the same move. The crown stays open and does not close up under the ice, so all the force goes into the crushed ice.

Why an ordinary spoon is not enough

In crushed ice the bowl of a bar spoon digs in and works like a shovel: it pushes a block of ice instead of moving through it, and the drink stays in layers, sweet at the bottom and watery on top.
