The 20cm vacuum sealer rolls in two lines

The embossing is the raised texture on one of the two sides: it lets the air through to the bottom while a bar sealer extracts from the mouth. In a chamber machine it is not needed, because the vacuum is pulled across the whole chamber, but it does no harm: the same roll works on both machines.

Seventy-five microns, and why they matter
Thin bags are pierced by the corner of an ice block or the stem of a herb, and a pierced bag is a lost vacuum that nobody notices until it is opened. The 75 microns hold, and they take the 100°C of sous vide cooking without the seal giving way. The maker declares that the materials filter UV light: the contents are protected from light as well.
How to cut it
Pull the roll out of the sealer to the length you need, bring down the cutter and seal one end: the bag is ready. A portion needs twenty centimetres of length, a garnish as little as ten. With a chamber machine, cut with scissors and leave three fingers of margin for the seal.

If you bag garnishes, portions and single serves, or if you make infusions and keep leftovers at home. For large batches, trays and two-litre batches you need the 28cm roll. Bars that work every day keep both in the roll holder, in turn.
