Who it is for

For bars serving stirred classics that want them to stay cold to the last sip. A stirred Martini comes to about 90ml once diluted: in a 150ml glass it fills a good two thirds, the drink looks full, and the surface exposed to the air is as small as it gets. That is why modern bars have adopted this shape almost everywhere.

Why the inward-curving rim changes the drink

A cocktail served up has no ice: the only cold it has is the cold it carries, and from there it can only warm up. How fast that happens depends mostly on the surface exposed to the air, and a rim that narrows towards the top cuts it clearly compared with a coupe or a cone. The same narrowing does a second thing: it carries the aroma towards the nose instead of letting it drift, and on a stirred drink, where the spirit’s aroma is most of the nose, you notice it. The third result is the most practical and the one staff like most: a glass that narrows at the top does not spill on the way to the table.

Where the name comes from

Nick and Nora Charles are the leads of a series of American films from the 1930s, a couple who spend much of their time drinking cocktails. The glass in those scenes is small with a narrow rim, and when modern bartenders went looking for an alternative to the V-shaped cone they brought back the shape together with the name. It is a rare case where the historical reference matches the best technical choice.

Chilling, which counts double at this size

A small glass has less mass, so the cold it can store is limited: chilling the 150ml Nick & Nora before service is what makes up for it. Ten minutes in the freezer, or fill it with ice and water while you mix. Served cold, it keeps a Martini at temperature longer than any other shape.

Care

It goes in the dishwasher, with some care over loading: stemmed glasses break at the stem, and small glasses tend to wedge between the wires of the rack, so leave space between them. Chilling in the freezer before service is standard practice with this shape and does no harm to the crystal, as long as it does not go straight from the freezer into hot water.

Isn’t 150ml too small? No: a finished stirred Martini takes up 90ml. The small glass keeps it cold and makes it look full.
