How a stainless steel Martini glass works
A Martini is stirred in the mixing glass with a bar spoon and strained into the glass without ice, so it is the glass that keeps the drink cold. Put the stainless steel Martini glass in the freezer before service, or fill it with ice and water while you stir and empty it at the last moment. When the surface frosts, it is ready.
Two hundred millilitres is a proper Martini size: the strained drink fills the bowl without reaching the rim, leaving room for an olive on a pick or a lemon twist expressed over the top. At 125g it is light in the hand; the straight stem is held between the fingers without touching the bowl, so the hand does not warm the drink.
