Who it is for

For anyone garnishing with something that gets speared and who does not want to run short halfway through service. Ten is not a stock: it is the minimum working kit.

Why ten and not two

Because a pick only comes back to the bar when the glass does. The right number of picks to keep in service is at least the number of garnished drinks that can be out at once: if there are eight Martinis with an olive in the room, eight picks are out and none of them is available. With two, you are washing by hand between drinks, which during a full service does not happen.

The box is not packaging

It is where the picks live between services. Fourteen by ten centimetres fits in a station drawer, and keeping them there rather than loose does two things: it protects them from whatever is on the bar and it lets you count them at the end of the shift without hunting. A missing pick shows up at once when there is only one place to look.

The end of shift count

This is the habit that decides whether a reusable kit lasts. Ten bought, ten counted: if two are missing you know straight away where to look, which is in the cleared plates and the napkins. Putting it off means finding out a month later that you have four, and by then nobody knows when they went.

Steel or single use

Steel pays for itself and looks right in a glass, but it needs the glasses to come back. Single use needs no managing, no counting and no washing, but it gets bought again: it is the choice for anyone working big volumes or doing a lot of table service, where some of the picks never return. The decision is made on the kind of service, not on the price of one piece.

Washing

In the cutlery basket, standing up. In an open basket a thin pick slips through the mesh and ends up on the floor of the machine, and from there it is either retrieved or lost. Anyone washing ten at a time uses a perforated container, which also serves to count them coming out.

Care

Rinse straight after use, because olive brine and citrus juice left on steel attack it over time. Dry before putting them back in the box: one damp pick shut in a box with nine others is the fastest way to find all ten marked.

Where they sit during service

In a narrow, tall holder with the points down, next to the condiment tray. The two things get used together: open the tray, take the olive, spear it. Keeping the picks at the other end of the bar means two journeys for one garnish, and that is the kind of detail that decides whether a drink goes out in thirty seconds or in fifty.
