The Al Andalus chip basket in two lines
The Al Andalus chip basket by Comas is a mini basket in stainless steel for bringing fried food to the table. This is the round model: 9cm diameter, 12.5cm height, 143g weight. It is the tall, narrow shape in the range. It is sold singly.
For serving, not for the fryer
It is the easiest buying mistake to make, and it needs clearing up straight away. This basket does not go into the oil: it is not a fryer basket and does not replace one. Comas lists it among its table miniatures and declares its use, which is presentation. The food is cooked in the fryer, drained, and then tipped into the basket to go to the table.
Who it is for
For the wine shop and the wine bar that pair the glass with something fried: chips, vegetable crisps, fried stuffed olives, croquettes. For the cocktail bar that serves one portion per person in the early evening in place of the shared bowl. For the pub and the taproom, where chips are the most frequent order beside the pint.
At home it is the basket for chips on an evening with friends: one each, and nobody has their hands in the same plate.

Why a chip basket in place of the plate
Fried food served in a deep plate sits in its own steam. After five minutes the pieces underneath are soft. In a basket the air passes between the pieces and the steam gets out: the portion stays crisp for the time it takes to drink a glass.
The tall, narrow shape holds the food upright. On 9cm of diameter and 12.5 of height, chips stand on end and are taken one at a time. On a small table it takes up the space of a glass.
The portion becomes a measure. A full basket is always the same quantity, whoever is in the kitchen. For anyone keeping an eye on the cost of the dish it is a check that needs no scales.
Stainless steel does not absorb grease and does not take on smells. At the end of the shift the basket comes back as clean as at the start, which a wicker or bamboo basket does not.

How the chip basket is used
A sheet of greaseproof paper goes in the bottom, to absorb the oil and catch the salt. The freshly drained portion is tipped in and taken to the table on a small plate or a board, together with the sauces. The basket is warm only from the heat of the food: it has not been through the oil.
How many to order
For a chip basket the count is done on the portions at peak service. A basket stays at the table for a quarter of an hour, then has to be washed: at least twice the number of seats served in one round are needed, because part of them is always in the wash.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item. The discount applies automatically in your shopping basket.
Cleaning
Comas declares the material, stainless steel, and the use, presentation at the table. It does not declare dishwasher use for this item, so we do not state it here as a fact. By hand it is washed with hot water and washing-up liquid, with a bottle brush or a soft brush where the grease collects, and dried before stacking.
The other shapes in the range
The Al Andalus baskets come in four shapes. This round one is for long fried food. The mini basket, 10 x 9cm is the compact portion, the rectangular, 21 x 10cm the portion to share, the square, 11 x 11cm the low one. The accessories for garnishing and serving are in the bar condiment category.
