Two parts instead of four

A traditional pourer is made of a rubber base, a body, a spout and the collar that holds them together. Every joint is a point where the liquid can become turbulent, and over time a point that works loose. The Metal Pourer Ultra reduces the whole to two components: fewer internal joints, so a smoother flow, and fewer things that can come apart in the wash.

What 157 BPM means

It is the tempo at which the maker states the flow is steady: 157 beats per minute, just under three a second. In practice it is the rhythm you count the pour to, and the maker’s way of saying the flow has been measured, not left to chance. A bartender counting at a slower rhythm still gets a repeatable measure, as long as the rhythm is always the same: the figure is a reference, not a rule.

Six pourers, and where they go

Six is the kit for the front row, the bottles you reach for without looking: the two or three white spirits, the vermouth in service, the bitter and the main syrup. These are the ones where the count must be fully reliable, because they go into most drinks. Second-row bottles can take simpler pourers or stay capped, and nobody will notice.

The rubber still decides

Here too. It adapts to necks of different diameters and makes the seal, and it hardens with time: when a Metal Pourer Ultra starts turning in the neck or letting a drop run down the glass, it is the rubber that is finished, not the metal. Change all six together, so the whole station stays calibrated the same way.

Care

Soak in hot water at the end of service and rinse well. With only two components, cleaning is simpler than on a four-part pourer, because there are fewer gaps for syrup to settle in. Keep it out of the dishwasher so the rubber stays soft.
