Why the bright colours
Because a dark scoop on a dark bar disappears, and ends up in the ice well. A neon colour can be found at a glance, so it goes back where it belongs instead of being left in the ice: a way of enforcing a hygiene rule without repeating it every shift. Black is for bars that keep the scoop in a fixed holder and do not have that problem.
What the drain holes really do
They hold the cubes and let the meltwater go. Without them, every glass starts with a few millilitres of water nobody put in the spec, and on a short drink you can taste it: the first sip is already as diluted as the fifth. The rule that always applies
The scoop never stays in the ice. Buried in the well, it cannot be retrieved without putting hands in, and from that moment the well is no longer clean. Keep it dry in a separate container or in the holder on the edge; that is why the neon colour is not a matter of looks: it is a reminder of where the scoop belongs.

A smaller scoop takes two or three per glass, and over two hundred drinks the number of movements doubles; a larger one picks up too much ice, which then goes back into the well after passing through a hand. Care
Dishwasher safe on normal cycles, the main reason to choose polycarbonate. Check the holes in the base, where residue collects if the scoop is put away wet: a direct jet on the base at the end of the shift is enough. Dry before storing, and keep it out of the well.
The right movement in the well
Slide in edge first and lift, rather than pushing sideways through the mass. Pushing packs the cubes and strains the edge, the part that meets hard ice first. Polycarbonate takes far more than a composite, but no material takes the wrong movement repeated two hundred times a night.
One per well
Always the same one, with its holder. Moving a scoop from one well to another carries water and residue from one end of the bar to the other, and it is one of the most common findings in a hygiene inspection. It is also the practical reason the four colours are useful: one per station, and nobody mixes them up.
