Behind the bar
Gold is the plating that reads from furthest away, and that is why it gets chosen. Under warm light the reflection is strong and the tool becomes part of what the guest watches while you build. Under cold light it shifts slightly and gives back less, so it is worth looking at how the bar is lit before deciding.
The rest is stainless steel: weight, balance and strength do not change against the bare version. The advantage of buying them as a kit is that the eight pieces carry the same plating from the same batch, and two different golds side by side show up immediately.

Choose this one if
The bar is in full view and the lighting is warm. If you work behind a closed station and nobody sees the tools, the bare steel version costs half as much and takes the dishwasher.
Care
No dishwasher: a hot cycle with commercial detergent dulls the gilding in patches, and on gold the fault shows more than on any other finish. Hand wash, mild soap, dry straight away.
