The Flavour Blaster cocktail foamer in two lines
The Flavour Blaster cocktail foamer is a vegan foaming ingredient in a 120ml bottle with a dropper. It gives a sour its foam in place of egg white and aquafaba. The maker states it has no taste, no smell, no egg and no allergens.
The dose is up to one dropper per drink. One bottle, according to Flavour Blaster, makes 120 to 240 drinks, depending on how much foam you want.
Who the cocktail foamer is for
For the bar with a Whisky Sour, Pisco Sour, Gin Fizz or Espresso Martini on the menu and a tub of egg whites in the fridge to make them. Egg is one of the 14 allergens that must be declared to guests; it has to be stored, separated and used the same day, and when the bar is three deep, eggs get cracked one at a time and the yolks go in the bin. With the cocktail foamer the foam comes from a bottle that sits in the mise en place next to the syrups, and the dose is the same every time.
For the guest who asks for a vegan sour, or who does not eat egg: the same drink, with its foam, without changing the spec.
At home it is the way to make a Whisky Sour with a foam top without opening an egg for a single drink. A few drops in the shaker, and the foam comes out as it does at the bar.

How to use the cocktail foamer
Put the ingredients in the shaker, add up to one dropper of foamer and shake as usual. The back label says it in one line: “Add 1 dropper to your cocktail shaker, shake with ice and strain.” The foam forms in a few seconds and settles smooth on top of the drink. It also works with the Flavour Blaster NitroPress and with mixing by hand.
Fewer drops give a thin layer; a full dropper gives the tall head of a classic sour. That is why the stated yield runs from 120 to 240 drinks: it depends on how much foam your spec calls for.
It does not change the drink underneath
The cocktail foamer has no taste and no smell. It does not leave the smell that egg white picks up when a drink sits on the bar top for a few minutes, and it does not mask the citrus or the spirit. The bartender adjusts the foam without rebalancing the recipe.
How it costs out per drink
It is costed like a syrup: one dropper per drink, a fixed dose, a fixed number in the GP sum, and no eggs thrown away at the end of the night.
