Who it is for

How the bubble forms

The tank holds the aroma, the cartridge turns it into vapour and the nozzle releases it. Dip the nozzle in the bubble solution and a film forms, which the vapour inflates and releases onto the glass. Why the aroma sits on top, not inside

Because what we perceive in a drink comes more from smell than from taste: the tongue picks out a few basic sensations, the nose thousands of compounds. An aroma added to the liquid blends with everything else and has to be measured carefully, because it changes the drink; an aroma held above it reaches the nose at the right moment and leaves the spec untouched. Which drinks carry it

Drinks served in wide-mouthed glasses, because the bubble needs a surface to rest on: coupes, rocks glasses, low tumblers. On a flute or a narrow glass the bubble struggles to sit. On flavour, it works where the aroma makes sense with the drink, not where it is added for surprise: a citrus bubble on a citrus cocktail completes it, a bubble gum one on a Negroni distracts.

Care

The tank unclips and is stored closed. Rinse the nozzle after using the bubble solution, before it dries, so the film forms cleanly next time. Keep the gun on a stand and out of the wet: it is an electronic device working among liquids, and that is all the care it needs.

How long the bubble lasts

A well-made bubble stays on the glass for a few tens of seconds, no more: it has a short life, and that decides how it is served. The drink with the bubble leaves the bar and goes out straight away, with no wait on the pass and no long photo.
