The rectangular serving basket in two lines
The Al Andalus rectangular serving basket by Comas is a stainless steel basket for fried food, 21 x 10cm and 4cm high, weighing 200g. It is the long, low shape in the range: the food lies flat and is not piled up. It is sold singly.
It is not a fryer basket
The shape recalls the basket of a commercial fryer on a small scale, and that is intended. The use is different: Comas lists it among its table miniatures and declares it for presentation. It does not go into the oil. The food is fried with the kitchen equipment, drained, and the basket is used to serve.
Who it is for
For the wine shop and the wine bar that bring fried food to share with the bottle: battered vegetables, salt cod, courgette flowers. For the cocktail bar that serves at the bar, where a long, narrow container fits between the guest and the edge. For the restaurant that presents mixed fried food as a single portion. For the pub that serves onion rings and chicken bites.
At home it is the basket to set between two people, with the sauces at the sides.

Why a rectangular serving basket that is low
Delicate fried food does not take weight. A courgette flower or a battered vegetable put in a tall container ends up crushed by the ones above. In 4cm of height the pieces sit in one layer or two, and reach the table whole.
On 21cm of length the pieces go in a row. With mixed fried food the guest sees straight away what is there, and two people help themselves from the two ends without crossing hands.
The 10cm of width is less than a plate. On the small table of a venue that serves wine, between glasses and bottle, a narrow container finds a place where a dinner plate does not fit.
The thin layer lets the steam out over the whole surface. Fried food laid flat stays dry for longer than food in a pile, which is why in the kitchen it is drained on a rack and not in a bowl.

How the rectangular serving basket is used
A sheet of greaseproof paper cut to size goes in the bottom, to absorb the oil. The pieces are laid in a row, the largest underneath. The basket goes to the table on a long board or an oval plate, with the small bowls of sauce beside it. Outside the hours when fried food is served, the same basket holds breadsticks or sliced bread.
How many to order
The portion to share goes out one per table, not one per person. The count is done on the tables at peak service, plus a reserve for washing: a greasy rectangular serving basket does not go back on the floor without passing through the sink.
The more you buy, the less you pay: 4 pieces -5%, 6 -7%, 8 -10%, on the same item. The discount applies automatically in your shopping basket.
Cleaning
Comas declares the material, stainless steel, and the use, presentation at the table. It does not declare dishwasher use for this item, so we do not state it here as a fact. By hand it is washed with hot water and washing-up liquid, with a bottle brush or a soft brush where the grease collects, and dried before stacking.
The other shapes in the range
For the compact single portion there is the mini basket, 10 x 9cm. For chips, which stand on end, there is the round basket, 12.5cm tall. For a low, compact portion there is the square, 11 x 11cm. The other serving accessories are in the bar condiment category.
