This 1 litre stainless steel soda siphon is the classic lever siphon: cold water up to the mark, one 7.8g CO2 capsule screwed into the capsule holder, and the soda comes out under pressure, glass after glass. It is 31cm high, 95mm in diameter and weighs 1kg. The box includes the gas cap and a hook.
Who it is for
For bars that serve highballs, spritzes and long drinks and want soda with the same fizz from the first glass to the last. An open bottle loses gas every time it is uncapped, and by the end of the night the bottom of it is still water: the soda siphon stays under pressure for as long as there is liquid inside. At peak service it is one bottle fewer to open and a single movement, the lever.


How to charge it, and why the water must be cold
Fill with cold water up to the one litre mark, screw on the head, put the capsule in the capsule holder and screw it in until the short hiss that tells you the gas is in. Then shake for ten seconds and put it in the fridge. Cold water is not a suggestion: at 4°C carbon dioxide dissolves about twice as well as at 20°C, and with lukewarm water the soda comes out flat even with the right capsule.
One 7.8g capsule charges one litre, about five highballs with 200ml of soda each. The siphon takes the CO2 soda chargers, pack of 10, from the same range: ten capsules make ten litres.

Why the soda siphon stays out of the dishwasher
The head has seals and a valve, and the hot dishwasher cycle hardens them: the first thing to go is the seal, and a siphon that does not hold its seal will not charge. Rinse it in hot water, dry it and store it open, with the head unscrewed, so the seals are not left compressed. Thirty seconds at the end of service.
Siphon or bottled soda
The sum is not the price per litre, which is similar. It is the half-empty bottles poured away at the end of the night, and soda that fizzes the same in every glass instead of fading as the hours go by. On a bar serving ten highballs a night the siphon pays for itself in a few weeks; on one serving two, the bottle is fine.
Choose the soda siphon if
If you serve long drinks and spritzes with soda and want the same fizz in every glass, with no half-empty bottles. If you need a foam or whipped cream, the right siphon is the N2O one, in the same category: soda needs carbon dioxide, foam needs nitrous oxide, and the two siphons are not interchangeable.
