How it is charged
Fill the body without going past the marked level, screw the head down fully, put the nitrous oxide capsule into the holder and screw until you hear the gas go in. Then shake it vertically three or four times. The mix has to be smooth and free of pieces: any lump or scrap of fruit ends up in the valve and blocks it, and that is the number one cause of siphons that stop working.
The dispensing move
Siphon upside down, tip resting on or very close to the surface of the drink, lever pressed firmly and released sharply. Dispensing with the siphon tilted rather than head down lets the gas out with the mix, and the foam comes in bursts. Releasing the lever slowly leaves a trail that smears the rim of the glass. Those are two details learned in five drinks and never got wrong again.
Strain before charging
This is the rule that saves the tool. Any mix goes through a fine strainer before it enters the siphon, even when it already looks smooth: one fruit fibre or a scrap of peel is enough to block the tip.
