The steel straw in two lines
This is the stainless steel straw with a spoon on one of its two ends, 22 centimetres long: you drink from one end and stir with the other, without adding anything else to the glass.

For anyone serving thick drinks, where an ordinary straw is not enough. Smoothies, shakes, frozen drinks: anything that packs down at the bottom and stops coming up.
The problem it solves, and the bartender never sees it
It is one the guest lives with. In a shake or a frozen drink the thick part settles at the bottom and the straw blocks; with no spoon the only options are stirring with whatever is on the table, or giving up on the last third of the glass. With the spoon end of a steel straw the guest stirs it themselves and finishes the drink, and that shows in the glass coming back empty instead of half full.

How long it lasts and what it costs to run
Steel lasts years, and that is the declared advantage. The cost is that it has to be washed and counted like a piece of cutlery: it joins the dishwasher round, takes up room in the basket and gets counted at the end of the shift, because a straw that does not come back is a straw bought again. In a venue doing a small number of considered drinks the sums work quickly; on a two hundred cover terrace paper still makes more sense.
The cold you feel on your lips
This is the least obvious effect of metal, and it is not a fault: on a frozen drink or an iced shake the steel carries the temperature of the drink, and the cold arrives before the sip does. On a drink at room temperature that effect is absent, and the straw is as neutral as any other.
When it is not needed
On clear drinks. A gin and tonic or a spritz has no settled base to stir, so the spoon has nothing to do and you are paying for a more complicated piece for a function that stays idle. For those drinks a plain straw, in glass or in steel, costs less and does the same job.
How it actually gets washed
Inside, with a brush. That is the one point where a reusable straw can fail an inspection: the dishwasher washes the outside and not the inside, and in a tube three millimetres across the residue of a shake stays put. The brush is an accessory costing next to nothing that decides whether this product is hygienic or not, and it wants using every time, not now and then.
Care
Brush straight after use, then dishwasher in the cutlery basket. Dry completely before putting it away, standing up or on a cloth: water sitting inside the tube is the quickest way to find a film in there next time.
How many to keep in service
One for every thick drink that can be out at the same time, plus a spare. That is a different calculation from single use straws: here the number depends not on how many you get through in a night but on how many are needed at the same moment, because the others are being washed. Six steel straws cover a bar sending out two or three frozen drinks at a time without ever running short.
