For a station that runs more than two garnishes at once. Brined olives next to citrus twists cross over inside the hour, and the drink that comes out of it is nobody’s recipe.
Six pots and a workstation
These pots are sized to live in the garnish section of a station rather than to stand alone on a shelf, which is the reason they come as six: a station is fitted out once and topped up daily. When one pot goes out of shape it is replaced on its own, without touching the rest of the setup.
Steel against the acids
Lime and lemon juice go over a garnish station all day. On steel it runs off and wipes away in one pass, it leaves no stain and holds no smell, and after two seasons the pot looks the same as it did at the start. That is the practical argument for steel over plastic on a station kept on show, along with the fact that steel reads as equipment to a guest sitting at the bar.

The lid on a counter in front of guests
It keeps cut surfaces from drying out through a long service, and it closes the pot off from the other side of the bar. An open pot in front of a guest is an invitation to help themselves, and in many venues closing it between orders is a rule rather than a habit.
Care
Rinse the pots and the lids as they come off the station and dry them before they go back together. No common steel wool on stainless: it leaves marks that show on a counter under lights. Wash by hand unless the supplier states otherwise.
