For a bar with a selection of grappa and amaro that sells it as a selection. An amaro served in a 40ml shot glass is a drink; the same amaro in a glass that leaves it room is a tasting, and it can be charged for accordingly. Why the empty volume counts
On an aromatic spirit the aromatics are not in the liquid, they are in the air above it. A 40ml pour in a 95ml glass leaves more than half the volume free, and in that space the volatiles gather and reach the nose as you come close. In a shot glass, where the liquid comes almost to the rim, that chamber does not exist and you mostly get alcohol. It is why tasting glasses are large against the pour, and it holds for grappa as it does for whisky.

Choose the grappa glass if
You sell grappa and amaro as a selection and not as an end of meal fallback. For shots served fast and in quantity, 40 or 60ml glasses are quicker and cost less to replace.
The plain wall, which here is functional
The absence of decoration on a tasting glass is a choice about reading rather than style. An aged grappa has a colour that tells you about the maturation, an amaro has a density you see in the legs on the wall when the glass is turned: those are things a knowledgeable guest looks for, and decoration hides them. On a glass meant to be looked at before it is drunk, a clean wall is part of the instrument.
Serving temperature
Worth saying, because it is where most mistakes happen. Young grappa and amaro are served cool, around ten degrees, but not iced: below that the aromatics close and only the alcohol is left. Aged grappa goes almost at room temperature, like a spirit for sipping. A 95ml glass with a thin wall follows the temperature of the hand faster than a thick one, so hold it at the base if you want to keep it cool.
Care
Dishwasher with no precautions: no decoration, no relief, nowhere for residue to sit. On glasses for neat spirits a generous final rinse is worth it, because detergent traces reach the nose before the palate, and on a tasting they undo the whole job.
One glass or two sizes
Anyone with a serious spirits selection keeps two formats: the short glass for shots and this one for tastings. Anyone serving amaro only after dinner can keep this one and use it for everything, because a short pour in a larger glass is still correct while the reverse is not.
