Who it is for
For anyone who has worked out that a coupe spills and wants to keep it anyway. It is a beautiful shape and a structurally unstable one: the flared wall pushes the liquid towards the rim at every change of direction, and whoever carries the drinks to the table knows it. Coming down to 220ml reduces both the surface and the lever arm, and the result is a bowl you can carry without walking a tightrope.
The proportion between the drink and the bowl
A shaken cocktail finishes between 100 and 140ml. In a 220ml bowl that measure fills around half the volume, and that is the proportion service considers correct: the drink looks full, the rim stays free by a couple of centimetres, and the waiter has a margin. Going up to 270 or 330ml the same measure drops below half and the drink starts to look thin, with the temptation to inflate the recipe to fill the glass, which is the quickest way to unbalance a classic.

Choose the Fizz if

A fizz is a sour lengthened with soda, and in its classic form it is served without ice in a tall narrow glass. Dishwasher without trouble. With egg white drinks it is worth rinsing straight after service: protein drying on glass is more stubborn than sugar and the wash fixes it. Watch the basket load, as with every stemmed glass.
