The Brillante collins glass in two lines
The Brillante is a 370ml tall glass in crystal glass, 150mm high, sold in packs of six. It sits in the collins range: large enough for a drink built with more than two ingredients, and tall enough to take a whole spear of ice.
Who it is for
For bars with long drinks on the list that build them in front of the guest. Gin and tonic, Cuba Libre, Mojito, a lengthened Americano: these drinks start in the glass, with ice in from the first step, and they need a tall column where the bar spoon can reach the bottom without the liquid going over the rim.
Highball or collins
The tall glass family has two proportions, and it is worth telling them apart when you buy. A highball runs from 240 to 350ml and stands 125 to 150mm high: it is the glass for one spirit and a mixer, whisky and soda or a Cuba Libre. A collins runs from 300 to 410ml and goes up to 200mm: it is narrower and taller, made for drinks with more than two components and plenty of ice. The two ranges overlap between 300 and 350ml, which is why many bars use the names as if they were the same. At 370ml and 150mm the Brillante is a full collins.

Choose the Brillante collins glass if
Long drinks are an important part of your service and you want one size that covers them all. For spirit-forward classics served short over a large cube you need an old fashioned glass instead: it is low and wide, with a quite different ratio of liquid to ice.
Why a tall column keeps the bubbles
This is the technical reason a drink with soda is not served in a wide coupe. Carbon dioxide leaves from the surface in contact with the air: the smaller that surface, the more slowly the drink goes flat. A tall, narrow glass has a small mouth for the volume it holds, so a gin and tonic stays lively in it for much longer than in a wide glass of the same capacity. The ice does the rest, because cold keeps the gas in solution.
Care
It goes through the dishwasher without special care. With tall glasses, give the rack some space: glasses loaded close together knock during the cycle, and the rim is where they touch. Dry them with care, because on a tall column limescale marks show against the light.
Six glasses: who they cover
Six cover one station, not a whole service. The count that works is the drinks served in the busiest hour, not the total: if a gin and tonic goes out ten times an hour and the wash cycle takes twenty minutes, six glasses run out sooner than planned. For high volumes, order several packs.
