The Moros lime squeezer in two lines

It is a hand citrus press in 18/10 stainless steel with a silver finish, designed for continuous use behind a bar. The bottom of the cup has sized drainage holes, and the tool weighs 100g.

Who the Moros lime squeezer is for

For bartenders who squeeze limes by hand during service and want juice in the glass without pips or coarse pulp. The Moros does what a juicer does not: it works one half at a time, in two seconds, with nothing to switch on and nothing to wash afterwards.

How a hand press works, and why the lime goes in upside down

The half goes into the cup cut side down, with the peel facing up, the opposite of what seems logical. As you close it, the press turns the peel inside out and pushes on it from the outside: pressure reaches the whole surface rather than the centre, and the fruit empties almost completely.

That is why a squeezer used properly gets more juice out than a hand squeezing: it is not strength, it is that the peel itself becomes the part that presses. Put it in the wrong way round and you get half the juice and conclude the tool does not work.

The drainage holes, the part you choose on

Every squeezer has a perforated base, but the size of the holes changes the result. Wide holes let pips through with the juice and mean straining afterwards. Holes too narrow clog with pulp after five limes and have to be cleared with a cocktail stick in the middle of service.

Which citrus it works on

The Moros is sized for limes and small lemons, which is what this kind of press exists for. A large lemon or an orange does not fit in the cup, and forcing it does not squeeze it: it crushes it, and the juice comes out at the sides rather than through the holes.

That is why a bar that also works with oranges keeps two squeezers of different sizes, rather than looking for a universal one that squeezes everything badly. On limes and small lemons, which are ninety per cent of a cocktail bar’s work, this one is more than enough.

18/10 steel against painted aluminium

The most common squeezers are painted aluminium, and that is where the difference shows over time. The paint on the edges of the cup is where pressure is highest: after a few months of service it flakes, and the flakes end up in the juice. That is why many professional kitchens replace coloured squeezers every season.

18/10 stainless steel has no paint to lose. It takes the acidity of lime without clouding, holds no odours and does not bend under the repeated pressure of the handles. It costs more and you buy it once.

Care, and the one thing not to forget

It goes in the dishwasher with no special care, but the step that counts comes first: rinse it under running water straight after service, with the arms open. Pulp stuck in the holes becomes a crust once dry that the dishwasher jet will not shift, and then you need a brush. Ten seconds of water at the right moment saves five minutes later.
