Why glass, when plastic costs less
For three reasons you see at the bar. Glass does not take on smells, so the same bottle holds vanilla syrup today and pepper syrup next week with nothing carried over. What the airtight closure really protects
It is not so much that the liquid has to stay in: it is that the air has to stay out. A premix with a citrus element starts changing after a few hours of contact with oxygen, and a closure that holds slows that down visibly against a cap resting on top. It works the other way too: an aromatic syrup badly closed scents the whole fridge and takes on the smell of whatever sits next to it.
Washing, with the one precaution that counts
The bottle goes into the dishwasher, but first the cap and gasket come off and are washed by hand. The heat of the cycle hardens the rubber and shrinks it, and a shrunken gasket stops sealing: it is the most common way to ruin a bottle that otherwise lasts years. The glass body fears nothing, and it is worth drying upside down because the narrow neck holds damp.
Half a litre is a working size
A 500ml bottle covers roughly a week of service on a syrup that goes into two or three drinks, and that is the balance worth aiming at. A larger format looks convenient but keeps a preparation around too long, and at half a bottle the volume of air above the liquid is already greater than the contents. A smaller one forces a refill every two days, which is time taken from service. Anyone working with several house preparations usually keeps three or four identical ones in a row, so the levels compare at a glance.
How to label it
Contents and preparation date, always, even when there is only one preparation. A bottle with no date is a bottle thrown away at the end of the week on a doubt, and half a litre of wasted syrup costs more than the marker. A strip of paper tape on the body comes off without residue, which a sticky label does not.
