Why the aperitif wants a large goblet
Because it is a long drink served over ice, and ice takes room. Choose the Aperitif goblet if
The aperitif is the heart of the service and you serve with plenty of ice. For short drinks served up, a size between 160 and 230ml keeps them cold and stops them looking lost at the bottom.
The other side of a wide rim
On a wide goblet the aromatics open out and reach the nose, which is why the shape is liked. The price is paid on the carbonation: a large surface lets the carbon dioxide go faster than a narrow glass, so a spritz in a goblet loses its bubbles before one served in a tall tumbler. It is a trade rather than a fault, and it should be made knowing you are choosing aroma over liveliness. Plenty of ice and quick service make up for most of it.
Care
Dishwasher without clouding. Wide bowls take a lot of room in the basket and want spacing, because rim against rim during the cycle is the commonest cause of chipping. On aperitif goblets an immediate rinse is worth it when you work with bitters and vermouth, which leave a coloured film.
How many goblets an aperitif shift needs
That is the sum that decides the purchase, and almost nobody does it. If thirty aperitifs leave the bar at peak and the wash cycle takes twenty minutes, you need at least twenty goblets in rotation: one pack of six will not do it and two will.
