Borosilicate, and why it is not just any glass
It is the same glass used in laboratory glassware: it handles thermal shock far better than ordinary glass, which is why it can go from an ice-cold drink to a hot wash without cracking. With ordinary glass that jump in temperature is exactly how it breaks. That is where the “unbreakable” in the name comes from: these straws are not indestructible, they are built to take the working cycle of a bar.

They hold no flavours
With steel that becomes an issue when you move from a frozen fruit drink to a dry one. Glass is inert: nothing that passes through it leaves a trace, so the same straw can serve a strawberry daiquiri and then a gin and tonic without the second tasting of the first. In a bar with only a few straws in rotation, that is the property that counts most.
A service reason, less technical
Glass does not change the colour of the drink and does not steal the scene from a careful garnish. In a layered cocktail or a drink with an unusual colour, a steel straw is an opaque object planted in the middle; a glass one is almost invisible. That is why glass straws are seen mostly on bars in full view of the guest rather than on terraces.
Two lengths, and when to use which
21cm for tall tumblers, highballs and long drinks; 15cm for rocks glasses, stemmed glasses and low glasses, where a long straw sticks out and gets awkward to drink from. Having both lengths in stock means you never have to improvise, and a 1cm diameter is wide enough for drinks with pulp and narrow enough for clear ones.
Glass or steel
Glass does not show and holds no flavours. Steel copes better with drops and gives no worries when glasses come back to the bar stacked, which in venues with table service is when things break. It is a choice between looks and peace of mind, and it depends on how glasses come back from service more than on how they go out.
Care
Dishwasher safe in the cutlery basket, so they stay still and do not knock against each other during the cycle. With thick drinks the same rule as steel applies: a straw brush inside, because the spray does not get into a 1cm tube. Check them against the light before service, which with glass takes a second.
