How it actually works
You load a nitrous oxide capsule, the gas goes in under pressure and dissolves into the mix. When the valve opens the pressure drops at once, the gas returns to its gaseous state and inflates the mass from within: what comes out is a foam. For it to hold you need something to trap the bubbles, which is a fat or a protein: cream, egg white, dissolved gelatine. A plain liquid with no structure comes out and collapses in seconds.

What goes inside
Cream, for the classic version. But above all, in a bar, citrus, coffee, wine or beer foams, built on a base that holds: egg white, light cream, or gelatine dissolved and chilled. The whipper takes hot and cold mixes, so you can go from an iced lemon foam to a warm chocolate one without changing tool. What you cannot do is load it with a plain liquid and expect a foam.
The head goes down
This is the instruction almost everyone skips: the whipper is kept in the fridge upright with the head pointing down. The reason is mechanical: that way the mix stays in contact with the valve and the gas sits above, so the first dispense gives foam instead of a puff of gas. Before serving, shake it vertically three or four times, no more: shaking too much breaks the emulsion you have just built.
Hot foams, and why they are possible
Because the gas does not need cold to work: it dissolves under pressure at any temperature. That opens the less known side of the siphon, hot foams to serve over a winter drink or a coffee. The limit is the structure: gelatine does not hold when hot, so you work with other thickeners or with fatty bases.
Stainless steel, and why it costs more
It takes the pressure better and fears neither knocks nor repeated dishwasher cycles. An aluminium body does the same job and weighs less, but it dents more easily, and a body dented at the thread becomes a sealing problem. On a tool that works under pressure, sturdiness is not a convenience.
Care
Dishwasher safe, but the head comes apart and the gaskets are rinsed by hand: they are the part that holds the pressure, and cream residue drying in the grooves is the most common cause of leaks. Release all the pressure before opening, always: opening a siphon still under pressure is how accidents happen.
