The limit of paper, said up front
After twenty or thirty minutes in liquid it softens. For a drink taken in ten minutes that is no problem; for a tiki sipped over an hour it is. Venues working with glasses that sit on the table a long time usually put two in, or change it halfway. It is the first thing to look at before buying paper straws, because it depends on the rhythm of your venue rather than on the product.

What they solve, in exchange
The single use plastic question, without moving to steel, which has to be washed and counted. For a summer terrace, where the glasses are many and the straw goes in the bin with everything else, this is the answer that adds no work at the end of a shift: no basket to load, no piece missing from the count, nothing to manage. The cost stays in the stock room instead of moving onto the staff.
Two hundred millimetres, and which glasses they suit
Tall tumblers, highballs, tiki mugs and long drink glasses. On a short rocks glass 200mm is too much and the straw sticks out awkwardly; on a very tall tiki mug it can be too little. It is a measurement to compare against the glassware you own, and the check is made before the order rather than after.
The print, which is not a detail
The multicoloured circles are made for a service where the straw is seen from across the room, which is the case with tiki and terrace drinks. On a list of classics served in crystal a printed straw jars, and a plain colour or no straw at all is better. The test is the same as for any garnish: it has to have a reason to be there.
How to store them
Away from damp and away from heat, closed in the pack or in a container. Paper takes up moisture from the air even without touching liquid, and a straw already softened in the stock room gives way in the glass in minutes rather than in half an hour. That is why paper straws should not be kept next to the glass washer or the sink.
Care
None, they are single use. They do have to be kept clean before use: an open container on the bar top collects splashes and dust, so a closed straw holder or a tall glass kept away from the working area is the better home.
How many to hold in stock
The count is made on covers, not on days. A terrace serving a hundred long drinks a night goes through four packs an evening, so the stock is thought of in weeks rather than in boxes. Paper straws take up little room and do not expire, but they do take up moisture: hold enough for a month rather than for a season, kept closed and away from the sink.
