Sixty and seventy degrees

That is the window the milk has to be brought to, and there is a reason behind both numbers. Below 60 degrees the cappuccino reaches the table lukewarm and the sweetness does not develop; above 70 the milk proteins denature, the foam collapses and that cooked taste stays, the one nobody can explain and everybody recognises.
