Cognac smoking sawdust: the 500g pack in two lines
Lacor Smokey cognac smoking sawdust is a wood sawdust, a finer grain than chips, which the maker states is 99.9% pure. The pack holds 500 grams. It burns in the chamber of the smoke infuser and gives the smoke to cold smoke a drink or a dish. It is sold singly.
Who it is for
For a venue with a smoked drink on the list that serves it every night. The 100g bag runs out without warning, usually on a Saturday, and the drink comes off the list until the next delivery. Five hundred grams of smoking sawdust is the stock format: open one pack and the smoked serves are covered for weeks. How many smokes a pack gives the maker does not state, because it depends on how much is loaded into the chamber.
It also serves the kitchen that finishes dishes under a cloche: cheese, fish, meat. Lacor presents the range for food, and the bar uses it the same way.
At home it is the format for anyone who has a Lacor smoke infuser and lights it often, for an Old Fashioned or for a cheese board brought to the table under glass.

How a drink is smoked
Load a pinch of sawdust into the burn chamber of the smoke infuser, light it and take the smoke where it is needed. At the bar there are two routes. The first is the cloche: the finished drink goes under the glass, the smoke fills the cloche and it is served at the table, where the guest watches it lifted. The second is the covered glass: fill the empty glass with smoke, cover it with a coaster and pour the drink when the order comes in.
In both cases contact lasts one or two minutes. Beyond that the smoke covers the spirit and the drink comes back. This is cold smoking: the smoke scents, it does not heat and it does not cook.
Why cognac
Lacor sells its smoking sawdust in six types: olive, orange, lemon, almond, whisky and cognac. For the cognac type the maker does not state which wood it starts from or how the aroma is obtained, and we do not add it. Behind the bar it is chosen for drinks built on aged spirits, where the smoke should sit on the side of the wood and not of the citrus.
What Lacor states
The maker describes it as special wood sawdust with 99.9% purity. It states a dense smoke and a slow burn at low temperature, which leaves a delicate aroma on the food. It also states compliance with the regulations for food contact use. The content is given in grams on the maker’s website.
Which smoke infusers it is used with
Lacor states compatibility with its own smoke infusers: the Magic (reference 69221) and the Instant (reference 69321). For devices from other brands the maker states nothing, and we do not write it in its place: the grain is that of a sawdust, and every device says in its manual which grain it takes. Anyone with a different smoke infuser should check there before ordering.

Storage
Smoking sawdust, like any sawdust, is sensitive to damp: wet, it is hard to light and smokes badly. Reseal the opened pack and keep it dry, away from the sink and the ice machine. The maker gives no expiry date on its website.
Smoking sawdust, cloches and smoke infusers
Cloches, smoke infusers and the other woods are in the smoking category. The same kind of sawdust comes in other woods in the 100g bag, for anyone who wants to try before stocking up.
